A brief summary of the operation (project), including a description of the objectives and main tasks to be accomplished and an indication of the expected results.

The subject of the operation is the development of an innovative technology for the production of dried fruit enriched with health-promoting ingredients from fruit juices, in particular natural fruit chips with significantly increased health-promoting and sensory qualities (appearance, smell, taste, texture). The main objective of the operation is "Development of an innovative product, in the form of Premium Fruit Chips, made from apples, based on the launch of a drying line for the production of a new product with innovative features - fruit chips with enhanced health-promoting qualities, using NFC juice and osmotic solution, sales and modern marketing methods." The objective of the operation will be achieved through the implementation of both industrial research and development work, as a result of which a drying line will be launched, which includes an advanced manufacturing process of several stages leading to the production of bioactive dried fruit in the form of chips with health-promoting properties, attractive texture and modified taste. The drying line will be put into operation on the premises of the production hall owned by Vigrana Sp. z.o.o..

Implementation of the operation will be possible when milestones are achieved:

1) Development of the formulation of an innovative osmotic solution based on fruit concentrate and fresh fruit juice of high quality.

2) Completion, integration and modification of the key equipment of the demonstration drying line in order to obtain high-quality material at each stage of the technological process.

3) Establish a drying demonstration line and conduct three repetitive production cycles while maintaining product and process stability.

4) Development of optimal technological parameters of the drying demonstration line taking into account product quality and energy intensity of the process.

The operation is aimed at developing a process innovation not previously used in Poland.

The main benefits that will result from the application of individual or all of the anticipated results of the operation (project) for the addressee.

The result of the operation will be the implementation in the activities of a member of the Operating Group of Vigrana Sp. z o.o., an innovative drying line for the production of fruit crisps with enhanced taste and health-promoting qualities. The implemented innovation will allow the production of fruit crisps with innovative features.

Main results of the operation:

• Implementation/development of technology protected by patent PL 219810 "Method for obtaining chips from fruits or vegetables";

• Development and start-up of a drying line in order to obtain test material in the form of a trial batch of health-promoting fruit chips (especially apple chips), with increased content of bioactive substances and attractive sensory qualities;

• Development of a product with innovative features in the form of pro-health fruit chips;

• Scientific publications (at least 3)

Pro-healthy fruit chips are an alternative to snacks commonly considered unhealthy (especially potato chips), they can also be an ingredient of a balanced diet to support the proper development of the young body and convalescence of sick people due to their health-promoting properties.
